青森市朝ラー【くどうラーメン】焼き干しラーメンとザル中華のお店

こんにちは、ikuzo いくぞう です。 今回紹介するのは2019年10月に新店舗へ移転した青森市の「 くどうラーメン」です。 新町の「くどう」と安方の「」は、どちらも昔からあるお店で、青森市民なら知らない人がいないくらいの人気店です。 青森駅近くには、この他にも「」や、味噌カレー牛乳ラーメンで全国に名を轟かせている「」といった人気店があり、駅周辺はちょっとした ラーメンの激戦区になっています。 この中で朝からラーメンが食べたいときは、 7時開店の「 長尾」、もしくは 8時開店の「 くどう」の2択になります。 「長尾」と「くどう」は450メートルしか離れていないので、優柔不断な私は「 今日はどっちにしよう？」といつも悩みます。 【くどうラーメン】 住所：青森市新町1丁目14-14 電話：017-722-6905 営業時間：8：00～16：00 定休日：木曜日  外観と店内の様子 赤い店舗は外から見ると小ぢんまりと見えます。 しかし店内は意外に広く、カウンターが16席と右の奥には4人用のテーブル席が2つあります。 麺を茹でている工藤さんのポジションは前の店舗と同じです。 津軽塗の箸立てとコショー、青森のラーメン屋ならではの七味もあります。 くどうラーメンのメニュー くどうは、お店に入ってすぐ左側にある「券売機」で食券を買うシステムです。 基本的なラーメンのサイズは4種類です。 初めての方はとりあえず「大」か「中」の食券を買って、足りなければ替玉を注文した方がよいかもしれません。 ラーメンの具はネギ、メンマ、チャーシューです。 チャーシュー増量の「 チャーシューメン 中650円 」、メンマ増量の「 メンマラーメン 中570円 」、生玉子が入っている「 月見ラーメン 中570円 」もあります。 「 サービスラーメン」はお得なラーメンかと思いきや、 具がネギだけのラーメンです。 ふつうのラーメンよりも100円安くなりますが、チャーシューとメンマがなくなる「かけラーメン」ってとこでしょうか。 ユニークなのは「 おためしラーメン 100円 」です。 麺は30gと少ないですが、ちゃんとチャーシューとメンマも入ってます。 「おためし」した後に、小以上のラーメンを注文すれば、おためし代の100円は返金してもらえます。 その他には、麺3玉と具が全部入った「 満腹ラーメン 900円 」もあります。 くどうのラーメン くどうのラーメンを一言で表すとしたら「 美しいラーメン」です。 スープは澄んでいて具もきれいに盛り付けられています。 麺を茹でている店主の 工藤公 くどうこうさん以外、店員はすべて女性の方で店内はいつも綺麗にしてあります。 なので、余計にラーメンが美しく見えるのかもしれませんね。 麺の硬さやスープなどはお好みで調整してもらえます。 味を薄くすることを青森では「甘め」って表現するんですよね。 他の県で「スープ甘めで」と注文したら「それは無理だ」と断られたことがあります。 「じゃ、うすめで」と言い直したら「それならできる」と言ってもらえました（笑） 工藤公さんにお話を伺いました 魚介スープだけで注文したら、食べ終わったタイミングで工藤さんが「 どうでしたか？」と話しかけてきてくださいました。 ちょうど他にお客さんがいなかったからだと思いますが、突然のことに少々戸惑ってしまいました。 まさか感想を聞かれるとは…。 （工藤さん）「コクがなかったでしょう？」 （わたし）「は、はい。 でも、焼き干しの風味が感じられて美味しかったです。 」 ここで、せっかくだから何か聞いてみようと思った私はバカな質問をしてしまいました。 （わたし）「煮干しは使わないんですか？」 （工藤さん）「 煮干しは臭みがあるので使いません。 」 （わたし）「焼き干しはどんな魚を使っているのですか？」 （工藤さん）「 イワシがメインですが、他にサバ、アジ、あご（飛び魚）を使ってます。 季節や値段によって使う焼き干しを変えてます。 」 （わたし）「一年中、同じじゃないんですね？」 （工藤さん）「 はい。 でも、サバは年中使ってますね。 」 これは聞いた価値がありました！ イワシだけかと思いきや、他の魚も使っていて季節によって味が変わっているとは…。 まぁ、素人の私には区別つかないですが…（笑） ここで他のお客さんが来たため、厨房の戻ろうとする工藤さんが私に一言。 「また何かご要望があれば仰ってください。 」 なんか感激！ 工藤さんとお話しができて、ますます「くどうラーメン」のファンになりました！ くどうのザル中華 最後に夏季限定ですが、くどうには「 ザル中華」もあります。 くどうの「ザル中華大盛」 （写真を撮る前にチャーシューを1枚食べてしまいました…。 ） こちらも麺がシャキッ！としていて美味しいですよ。 青森の夏の定番で、多くの店では「ざる中華」か「中華ざる」とメニューに書かれています。 「 アレは私が考案したものだ」と、ウチの母親がいつも豪語しておりました。 真偽は不明ですが「昭和50年頃、青森市の古川にあった蕎麦屋に私（ウチの母親）がリクエストして作らせたのが始まり」と申しておりました。 （…たぶん思い込みです笑） 発祥が蕎麦屋さんなのは本当のようで、つけ汁は「蕎麦つゆ」でお蕎麦のザルに盛ってあり、薬味はネギとワサビとうずらの卵を添えるのが一般的です。 どこのお店も、ちぢれの細麺で提供しているので、くどうの麺は「うってつけ」と言えるでしょう。 青森はもとより、現在は東北のあちらこちらで提供されているようなので、夏に東北地方を訪れたら是非とも召し上がってみて下さい。
